For a simple side dish, slice ripe tomatoes and sprinkle them with Za'atar and a drizzle of extra virgin olive oil.

Make Greek scrambled eggs with tomato and feta, by frying up some garlic and grated tomatoes, then add the eggs, salt and pepper and cook until lightly scrambled. Serve on sourdough bread, sprinkled with crumbled feta, parsley and a little chilli.

Roast halved tomatoes in the oven, sprinkled with a little sumac, for a delicious side dish.

Thickly slice crusty bread such as sourdough or batard, then brush with olive oil. Cut a clove of garlic in half and rub over the slices of bread, then smear the slices with halved tomatoes to impart juices and flavour. Place under a grill and cook until toasted. This is gorgeous with soup.
