This traditional blend actually contains 6 spices; one more than the Chinese 5 spice

The Vietnamese actually use 6 different spices in their 5-spice mix. It has a nice depth to it with the addition of green cardamom and the base of star anise and cinnamon. It is perfect on pork belly as a rub or in poached chicken.

Ingredients: Cinnamon, star anise, cardamom, fennel seeds, szechuan pepper, cloves

Ideas for Vietnamese 5 spice

  • Try mixing it into cooked lentils with coriander and spring onions as a salad or warm dish
  • Great as a rub on fatty meats like pork and duck
  • Add it to the beginning of a beef stew
  • Add a pinch to breadcrumbs used to coat fish, prawns or other seafood before frying
  • Put a spoonful into poaching stock for chicken to be shredded for spring rolls or sandwiches
  • Surprisingly good sprinkled on yams before roasting
